The skewers consist of thinly sliced beef heart (anticuchos de corazón). The meat is very lean, has a firm texture and tastes juicy and spicy once grilled. It is marinated for hours in a mixture of ají panca (a Peruvian red chilli variety), garlic, vinegar, cumin and herbs.
